Slow Cooker Roast Chicken Recipe for 4 People


Ingredients:

- 1 whole chicken (approx. 4 pounds / 1.8 kg)

- 2 tablespoons olive oil or softened butter

- 1 teaspoon salt

- 1/2 teaspoon freshly ground black pepper

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- 1 teaspoon dried sage

- Optional: Sliced lemon, onion, and fresh herbs (rosemary, thyme, sage) for stuffing the chicken cavity


Instructions:

1. Pat the whole chicken dry with paper towels, ensuring the skin is free of excess moisture. This will help achieve a crispy skin during cooking.


2. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, dried thyme, dried rosemary, and dried sage to create a flavorful rub.


3. Rub the olive oil or softened butter all over the surface of the chicken, ensuring it is evenly coated.


4. Sprinkle the prepared seasoning rub over the chicken, making sure to coat both the skin and the cavity. Optionally, stuff the chicken cavity with slices of lemon, onion, and fresh herbs for added flavor.


5. Place the seasoned chicken in the slow cooker, breast-side up. Cover the slow cooker with its lid.


6. Cook the chicken on low heat for 6-8 hours or on high heat for 4-5 hours. The chicken is done when its internal temperature reaches 165°F (75°C) and the meat is tender and easily falls off the bone.


7. Once the chicken is cooked, you can transfer it to a baking sheet and broil it in the oven for a few minutes to achieve a golden, crispy skin.
