Spiced Beetroot Dip Recipe for 4 People


Ingredients:

- 3 medium beetroots, scrubbed and trimmed

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 2 cloves garlic, minced

- Juice of 1 lemon

- Salt and freshly ground black pepper, to taste

- Fresh parsley or mint leaves, for garnish


Instructions:

1. Preheat your oven to 400°F (200°C). Wrap the beetroots individually in aluminum foil and place them on a baking sheet. Roast them in the oven for about 45-60 minutes, or until they are tender when pierced with a knife.


2. Once the beetroots are cool enough to handle, peel off their skins using your fingers or a knife. Chop the roasted beetroots into chunks.


3. In a food processor or blender, add the chopped roasted beetroots, olive oil, ground cumin, minced garlic, and lemon juice.


4. Blend the ingredients until you achieve a smooth and creamy consistency. If the dip is too thick, you can add a little water or more lemon juice to reach your desired texture.


5. Season the Spiced Beetroot Dip with salt and freshly ground black pepper, adjusting the flavors to your preference.
